Makki Di Roti And Sarson Da Saag 

Can you think of a Punjabi festival without makki di roti and sarson da saag? Probably not. This delight is fondly eaten not just in Punjab but in many parts of North India. Since mustard leaves grow abundantly in winter, they make for a lip-smacking as well as a healthy meal when paired with a crispy makki ki roti. This is a must during Lohri. Gajar-Gud Chawal 

In many parts of North India, rice is not eaten much as compared to wheat. But there are some authentic and signature rice dishes that have originated from North Indian states like Punjab. One such traditional rice dish significant to Lohri is gajar and gud chawal. This rice dish has grated carrots and rice slowly cooked with jaggery to perfection. It is consumed as a main course as well as a dessert.  

Ganne Wale Chawal 

Another traditional dish mostly made around Lohri is ganne wale chawal. Made up of sugarcane juice, this dish is known as raawh wale chawal in Punjab and rasawal in old Lucknow. Technically it is a kheer made with rice and sugarcane juice. This is slow-cooked on low flame and garnished with nuts.

Pinni 

Well, there is nothing that can separate Punjabis and pinni. Pinni is one of the most loved snacks and desserts for people exclusively during winter. Traditionally made with wheat flour, ghee, nuts, and sugar, it has ample nutritional properties and takes the center stage during Lohri.  

Gud Ki Roti 

Jaggery is one such ingredient used abundantly in so many dishes around Lohri. It is used in halwas, laddoos and even roti. Another traditional dish made during Lohri is gud ki roti.
