Aloo Paratha - This list cannot start without India's favorite breakfast aloo paratha. Stuffed paratha meet with the feeling of potatoes is the go-to breakfast for most of this country’s population. These whole wheat parathas, filled with spicy potatoes and topped with desi ghee or butter can be easily made using the subji that has been left over last night. all you need to do is add a little bit of freshly chopped onion and coriander leaves to your aleki sabzi and if it's a little liquid in consistency then make it dry with a little bit of sattu. And your recycled aloo paratha is ready.
Aloo Chaat - Do you have aloo ki sabzi left that you do not want to eat with your chapati? Then you can easily convert it into a spicy chatpata aloo chat and start your day on a very interesting note. All you have to do is heat up your subsidy a little and transfer it into a big bowl. Add curd and meethi chutney on top of it along with sev, chopped onions, chopped chilies and coriander leaves. Top it with a little bit of chaat masala, lemon juice and mix everything. Bombay style sandwich - Another classic breakfast dish, the Bombay style sandwich is made with a lot of potatoes and sev. In case you have a lot of boiled potatoes left, then it is perfect for making the sandwich. Toast some bread in butter and then start building up your sandwich by first adding green chutney, then a lot of mashed potatoes and the tin tomato slices on top of it. Close the sandwich and on the open end where potatoes are visible dip the sandwich in a plate full of sev.
Mashed potatoes - Our favorite aloo dish might be chokha but the distant foreign cousin of it, i.e., mashed potatoes can also be enjoyed for breakfast if you have extra boiled potatoes leftover in your fridge. All you have to do is mash those potatoes properly heat up a pan and add butter to it then, add some garlic, put in the potatoes and add a little milk. Cook till all the lumps are gone and then finally add grated cheese, oregano and chilli flakes. Your super jugaadu but delicious mashed potatoes are ready. Eat it with a toast and enjoy!
