Malai is a well-known byproduct of milk that most Indian people are acquainted with. Malai is used to give dishes a creamy and richer texture. Some people like having milk with lots of malai, whereas others like to use it to make ghee at home.

However, as people these days do not have a lot of time, it's pretty obvious that old practices like making desi ghee at home with malai are becoming a little less prevalent. Due to this, the accumulated malai at home often gets wasted and is thrown away by the end of the week. For people who do not have the time to make ghee with malai and yet want to use it effectively, here are some desserts that you can make with malai that also take less time.

* Malai Ladoo

The malai ladoo recipe is a sweet and extremely indulgent treat that you can try making at home. It is made by first mixing some grated coconut with desi ghee in a saucepan on medium heat. The grated coconut has to be cooked until it turns golden brown. Next, transfer this grated coconut into a separate dish and then add some crushed almonds and cashews to the mixture. In this, you can add the leftover malai, which will act as a binding agent and provide moisture to the other ingredients. For sweetness, you can add sugar powder or jaggery powder. Mix everything and give it the shape of a small ball. Let the ladoos sit for some time before enjoying them properly.

* Malai Salad

Malai salad is a quick bowl of fruits, some malai, and other flavouring ingredients. It is a quick salad recipe where you have to cut different types of fruits, such as bananas, apples, kiwis, and whatever is available at home. Transfer all these fruits into a bowl and add the leftover malai to the mixture. Also, add honey and cinnamon powder, along with vanilla essence for that extra flavour. They can also add some seeds or granola for crunch and to make it more fulfilling.

* Malai Fruit Bar

A Malai fruit bar looks like a decadent white chocolate bar that has been sourced from a premium confectionery store. However, it takes less than half an hour to be made at home and is a deliciously sweet treat that can be served after everyone is done with their meal. To make these bars, melt some white chocolate in the microwave. Once melted, add the leftover malai to the white chocolate mixture and some finely chopped blackberries and blueberries. You may also add cherries to strawberries as per their preference. Add a little bit of honey for sweetness. Mix all of these ingredients. Simultaneously, put parchment paper on the top of a tray. On this tray, pour the chocolate mixture and let it sit in the refrigerator for at least a couple of hours.

* Malai Rabri

The malai rabri is made from some leftover malai, milk, cardamom powder, chopped nuts, sugar, and saffron. To make this rabri at home, take a pan that has a heavy bottom. In this pan, heat both milk and malai together. Keep stirring the mixture for at least half an hour until the milk starts thickening properly. Continue with the process until the quantity of milk is reduced by half. Now slowly add sugar, saffron, and cardamom powder and let it simmer until you get the desired consistency. Rabri can be enjoyed with some hot jalebis on the side.

* Malai Kulfi

In India, one of the favourite desserts of not just children but also adults during the summer season is some flavourful and extra creamy malai kulfi. This kulfi is made from condensed milk, normal milk, malai, and chopped nuts. You can also add cardamom powder or any other flavour that they would like to add to the kulfi. To make this kulfi at home, you have to mix condensed milk, malai, and milk in a heavy-bottomed pan. Now heat all these ingredients at low to medium heat, gently. Add cardamom powder as well as chopped nuts to the mixture. Keep stirring the mixture continuously on low heat until the mixture properly thickens. Pour the mixture of this kulfi into small cups and freeze them for at least 5 to 6 hours.
