PAKORE

Ingredients:

  1. Green chilli - 2 finely chopped
  2. Coriander leaves - 1/2 tsp
  3. Red chilli powder - 1/2 tsp
  4. Onion - 1 finely chopped
  5. Salt - according to taste
  6. Garam masala - 1/2 tsp
  7. Turmeric - 1/2 tsp
  8. Potato - 1 boiled
  9. Khichdi - 2 cups
  10. Ajwain - 1/2 tsp
  11. Besan - 1 cup
  12. Oil - 1 cup

Method:

  1. Put the khichdi, gram flour, onion, potato, coriander leaves in a vessel and mix it well
  2. Then, add all the other spices, mix them well and prepare the batter
  3. Put oil in a pan and heat it; make pakodas out of the batter and fry them until they golden
  4. Now, take it out on a plate and serve it with your favourite chutney

CUTLET

Ingredients:

  1. Green chilli - 2 finely chopped
  2. Coriander leaves - 1/2 cup
  3. Coriander powder - 1 tsp
  4. Red chilli powder - 1 tsp
  5. Corn flour - 2 spoons
  6. Semolina - 3 spoons
  7. Onion - 1 (chopped)
  8. Salt - as per taste
  9. Khichdi - 3 cups
  10. Curd - 1/3 cup
  11. Oil - 1 cup

Method:

  1. Mix curd, semolina with the khichdi in a vessel and keep them aside for some time
  2. After about 5 to 7 minutes, add green chilli, onion, coriander leaves, cornflour, salt, red chilli, coriander powder and mix it well.
  3. Take the dough from this mixture and shape it into a cutlet
  4. Fry the cutlets in heated oil until both sides are golden
  5. Serve the cutlets with your favourite chutney

MASALA IDLI

Ingredients:

  1. Red chilli powder - 1/2 tsp
  2. Remaining khichdi-2 cup
  3. Salt - according to taste
  4. Garam masala - 1/2 tsp
  5. Buttermilk - 1/3 cup
  6. Mint leaves - 1 tsp
  7. Semolina-1 cup
  8. Oil - 2 tsp

Method:

  1. Mix the khichdi, semolina, buttermilk and water in a vessel and keep it aside for 10 to 15 minutes
  2. Then, add mint leaves, red chillies, garam masala to the mixer and bring to the form of a paste.
  3. Pour the mixture into the greased idli mold.
  4. After adding the mix, cook it for about 10 to 15 minutes
  5. Then, please take out the idli on a plate and serve it with sambar or chutney
