Phulkobir Roast: This is a Bengali cauliflower roast that is renowned for its strong flavours and heat. It's the ideal way to savour cauliflower's earthy, nutty flavour with a Bengali twist. Here, cauliflowers are dry roasted in different spices. This dish can be a wonderful addition to your menu, particularly if you enjoy the way that the distinct texture of cauliflower pairs well with spices.
Hansher Dim Kosha: For egg lovers, Bengali cuisine has a special dish called Hansher Dim Kosha, made with duck eggs. It's a flavorful curry that goes well with rice or roti. This dish is popular during the winter season in Bengal, keeping you warm and satisfying your taste buds with its delicious taste.
Bandhakobir Ghonto: This dish is made with a mixture of spices and cabbage (bandhakobir). This is a filling and aromatic dish that's typically eaten with steamed rice. This dish is prepared with simplicity, as very mild spices are used yet have a great taste.
Notun Aloo Dom: Notun aloo basically means new potatoes that are available during the winter. They are baby potatoes that are tiny and taste slightly different from regular potatoes. The term "notun aloor dom" means "new potato curry". Made with baby potatoes and a rich gravy, it's a tasty and warming dish. It goes well with both rice and roti.
Nolen Gurer Payesh :Nolen Gurer Payesh is an Indian-style sweet rice pudding, also known as kheer. This Payesh recipe has a very rustic, earthy flavour and an amazing fragrance because it uses the traditional date palm jaggery, nolen gur, which is available during the winter in plenty. It distinguishes this kheer from the ordinary chawal ki kheer, which is made with sugar, and makes it stand out.
Bengali Khichuri: It is sometimes referred to as khichdi or khichri, is a delectable dish that is frequently enjoyed during the winter. It includes seasonal vegetables, moong dal, and rice with some spices. The use of winter vegetables like cauliflower, peas, potatoes, and carrots makes this one-pot dish more flavourful for a satisfying meal. It's typically served with a side of chutney, some fritters, and a dollop of ghee.
Muger Dal: Mung Dal also known as sona dal in bengal is high in fiber, protein and iron. Easy to digest and so it's Bengali's winter favourite and comfort food. This is a very lentil dish made with yellow mong dal that are dry roasted, pressure cooked and made with whole spices. This wholesome dish is mostly served with rice, luchi, pooris and roti.
Patishapta: It’s a Bengali’s delicacy prepared in poush parbon mainly and in other festives like durga puja, lakshmi puja, etc. Patishapta is a kind of pancake or crepe made from rice that's stuffed with sweet fillings, usually made with jaggery and coconut or kheer.
