Always Store in an Airtight Container

The easiest and most effective hack to preserve jaggery is to keep it in an airtight container. A glass or plastic container with a secure lid works well. However, one must ensure that the container is clean and dry before jaggery is stored.

Keep it Dry

Even a small amount of moisture can cause jaggery to become sticky and develop mold. To protect jaggery from moisture, always place a clean, dry cloth or parchment paper at the bottom of the container to absorb any excess moisture. 

Store in a Cool Place

Jaggery should be stored in a cool and dry place, away from direct sunlight and heat. Thus, one must keep jaggery away from excessive heat that can cause jaggery to melt, while sunlight can lead to color and flavor changes.

Wrap in Plastic or Zip-Lock Bags

If you're storing jaggery in block or lump form, consider wrapping it in plastic or zip-lock bags before placing it in the airtight container. This extra layer of protection helps prevent moisture from reaching the jaggery. Also, look for any changes in color, texture, or the presence of mold. 

Consider Using Clay or Earthenware Containers

Traditional clay or earthenware containers can be perfect for storing jaggery. These containers provide a porous environment that helps regulate humidity and keeps the jaggery in good condition. If using clay pots, make sure they are clean and thoroughly dried before placing the jaggery inside.
