Gajar Methi 

Ingredients 

  • 2 kg carrots 
  • 300 gm fenugreek leaves 
  • 2 tsp coriander powder 
  • Salt to taste 
  • 1 tsp fenugreek seeds 
  • ½ tsp red chili powder 
  • 4 red chilies (whole) 
  • ½ cup oil 

Method 

  • Take carrots and peel them. Then, dice them into small cubes. 
  • Now, clean fenugreek leaves and wash them properly. 
  • Finely chop the fenugreek leaves. 
  • Heat a kadhai and add oil. Now, add fenugreek seeds and red chilies. 
  • Sauté it well.  
  • Thereafter, add carrots and chopped fenugreek leaves.  
  • Stir fry all the vegetables together for a few minutes. 
  • Add red chili powder, coriander powder, and salt. 
  • Mix well and cover the lid. 
  • When the carrots get soft and the fenugreek leaves look cooked, turn off the flame. 
  • Serve with roti.
