As a strong supporter of easy to make recipes, it would be safe to say that most desserts that feel like a treat seem like a handful to assemble. Between shopping for ingredients and measuring, stirring and what not, it might feel like work that would send you running around in circles. Of course, all of us have our good days and bad days; and on particularly bad days when you need a little something to cheer you up, a sugary treat that lives up to expectation might be hard to find.  More so, if the cravings pay visit late at night.

On the flipside, last minute throw-together dinners with colleagues or friends might be fun but ordering dessert feels less rewarding than something you could possibly create within moments, and leave to chill in the fridge as everybody enjoys dinner. This chocolate mousse, is an instant variation of the lengthy process that eliminates the need to make a complicated custard or whisk any cream or wash heavy pots, for that matter. All it takes is 15 minutes and a little chill in the fridge and you’ve got yourselves a creamy, luxurious dessert. You could, of course, substitute the dark chocolate in the recipe with any other type of chocolate of your choice. In the event that you do end up using white chocolate, ensure that there’s a tart flavour from a lemon curd of sorts to offset the sickly sweetness.

  • 50 grams dark chocolate
  • 1.5 teaspoon cornstarch
  • 1 cup milk
  • 1 tablespoon butter
  • 1 teaspoon vanilla
  • Pinch of salt

Method:

  • Break the chocolate into small pieces and add it to a heavy bottomed saucepan along with the milk. Allow it to melt gently. Spoon a tablespoon’s worth of the chocolatey milk into a small bowl and whisk together the cornstarch to avoid any lumps.
  • Add the slurry back to the pan with the chocolate milk and stir constantly until the mixture begins to thicken and turn glossy. Turn off the heat and add in the butter, salt and vanilla. Whisk everything together and pour into a stemmed glass or shot glasses. Chill in the fridge for a minimum of 10 minutes and serve, topped with fresh berries or more chocolate shavings.
