Choosing And Preparing Apricots

Methods For Preservation Of Apricots

Canning

Apricots can be effectively preserved by canning while maintaining their nutritional content and flavour. Start by getting your canning supplies ready, such as lids, bands, and sterilised jars. To ensure the food safety while processing and storing it the right canning procedures have to be followed. Before filling, sterilise the jars by immersing them in boiling water for at least ten minutes in a big pot of heated water. Make a syrup by heating water and sugar in a pot until the sugar dissolves in order to can apricots. You can make light, medium, or thick syrup, depending on your taste. Leaving approximately half an inch of space, firmly pack the cleaned and pitted apricots into the sterilised jars. To achieve a good seal, wipe the outer edge of each jar after pouring the syrup over the apricots until they are completely submerged. Place the jars in a boiling water bath for 15 to 25 minutes after sealing them with lids. After finishing, let the jars cool before keeping them somewhere dark and cool.

Freezing

An excellent way if you'd rather work more quickly is to freeze the apricots. To begin, wash the apricots, pit them, then cut them in half or quarters, whichever you choose. Coat the pieces with a mixture of sugar and lemon juice to keep them from browning, and it will also improve the flavour when thawed later. After preparing, arrange the apricot pieces in a single layer, avoiding contact, on a baking sheet. To make the apricots firm, place the baking sheet in the freezer for two to four hours. Next, remove as much air as you can before putting the frozen apricots in airtight freezer bags or containers. Store the bags in the freezer, where they will keep their flavour and texture for up to 8 to 12 months, after labelling them with the date.

Dehydrating

Another efficient preservation method that enhances the sweetness and flavour of apricots is dehydration. A food dehydrator, an oven, or even air drying are all viable options. Set your oven's temperature to the lowest possible level for oven dehydration. To achieve optimal results, cut the apricots into even pieces and pour them with lemon juice to keep them from browning. Arrange the cut-side up apricot halves on parchment paper-lined baking sheets. Make sure the pieces are sufficiently spaced apart without being crowded. In the oven, dehydrate the apricots for around 6 to 8 hours, checking frequently to make sure they are done. When done, the apricots should be leathery but still have some give. When using a food dehydrator, adhere to the temperature and time recommendations provided by the manufacturer. After dehydrating, let them cool before putting them in airtight containers and keeping them somewhere cool and dark.
