Ingredients

Peanuts: 2 cups of raw, peanuts. 

Salt: Add 1/2 teaspoon or to taste. Salt enhances the natural flavour of the peanuts.

Sweetener (optional): Consider 1-2 tablespoons of honey, maple syrup, or sugar if you like your peanut butter on the sweeter side.

Oil (optional): Add 1-2 tablespoons of peanut, vegetable, or coconut oil for a creamier texture, though peanuts naturally release oil as they blend.

Flavourings (optional): Cinnamon, vanilla extract or cocoa powder can add an interesting twist to your peanut butter.

Instructions

1. Roast the Peanuts

If using raw peanuts, roasting them enhances their flavour and helps in releasing their natural oils. Preheat your oven to 350°F (175°C) and spread the peanuts on a baking sheet in a single layer. Roast for 10-15 minutes, stirring every 5 minutes to ensure even cooking. Once golden brown, allow the peanuts to cool before processing.

2. Process the Peanuts

Place the cooled peanuts into your food processor or blender. Begin processing at a low speed. Initially, the peanuts will crumble into a coarse texture. Gradually increase the speed. As processing continues, the peanuts will release oils and transform into a creamy paste. This typically takes 3-5 minutes, depending on your processor’s power.

3. Add flavourings

Add salt and any optional sweeteners or flavourings when the peanuts have reached a smooth consistency. Process again for another minute to fully incorporate these additions. If you like crunchy peanut butter, add a handful of coarsely chopped peanuts and pulse briefly.

4. Adjust Consistency

If your peanut butter is too thick, drizzle in a small amount of oil, one teaspoon at a time, until you achieve the desired creaminess. Be careful not to overdo it—peanuts naturally release oil, so start with a small amount and add more if needed.

5. Store Your Peanut Butter

Transfer the finished peanut butter to an airtight container. Store it in the refrigerator to maintain freshness. Homemade peanut butter can last up to 3 months when stored properly. Stir before use, as natural oils may separate over time.
