This is a terrible and honest fact: turnips are among the veggies that people despise the most. Despite its reputation, my family adores this root vegetable, also known as shalgam in Hindi. In addition to eating it raw in salads, we also make its gherkin, which is essential for the winter, and its curry, which I will share soon. My mother made sure I ate all different kinds of vegetables as a child while pulling faces. The winter vegetable turnip is a powerhouse of fibre, vitamins, and minerals. This meal is simple to make and goes well with any kind of roti. Like sarson ka saag, this shalgam ka saag is a lip-smacking dish that will surely make a place in your heart.
Ingredients
1. 250 gm Turnip
2. 1 medium Chopped Onion
3. 1 medium Chopped Tomato
4. 2 medium Chopped Green Chillies
5. 1 tbsp Chopped Coriander Leaves
6. 0.25 tsp Red Chilli Powder
7. 0.25 tsp Salt
8. 1 pinch of Turmeric Powder
9. 1 tsp Ghee
10. 0.25 tsp Hing
11. 1.05 tsp Cumin Seeds
12. 1 tbsp Ginger Garlic Paste
Method
1. Peel the turnip, then chop it into small pieces.
2. Half a teacup of water, diced turnip, salt, turmeric, and chilli powder should all be placed in a pressure cooker. It should cook for around two to three whistles on high heat with the lid closed.
3. Open the cover and mash the turnip pieces once the pressure in the cooker has totally subsided.
4. Ghee, cumin seeds, hing, onion, ginger, garlic paste, salt, and chilli powder are added to a pan. until the onion is done, thoroughly sauté it.
5. Stir in the chopped tomato, green chillies, and coriander leaves.
6. Add the mashed turnip to the mixture as it begins to exude oil.
7. Stir thoroughly, then cook for two to three minutes over medium temperature. Serve it hot with any type of roti after turning off the gas.
