Gujiyas are sweet dumplings made with flour, sugar, nuts, and dried fruits. They are deep-fried until they become crispy and golden brown and then dipped in sugar syrup for added sweetness.

The round shape of gujiyas symbolizes the cycle of life. The filling inside represents the sweetness and richness of life. It is believed that offering gujiyas to family, friends, and neighbours during Holi signifies the exchange of love and affection. Gujiyas are not just a dessert but a symbol of unity, love, and happiness.

This recipe shared by Credits Chef Raghvendra Singh from Meetha By Radisson is a unique take on the dessert that combines tradition with the universal love of chocolate and like all Meetha creations, it is made with care and skill.

Ingredients 

  • ½ kg Maida 
  • 150 gms ghee
  • 2 kg sugar
  • 250 ml water
  • 2 L milk
  • 100 gms cocoa powder
  • 250 gms chocolate
  • 100 gms chocolate chips
  • Ghee to fry

Garnish

  • Silver warq
  • Chopped pistachios
  • Pinch of saffron strands

Method

  • Slightly warm the ghee and add it to the maida along with the water.
  • Knead into a dough.
  • In a large pot, add the milk and reduce it on a high heat for half an hour.
  • Then chop and add the chocolate and let it melt for another 10 minutes.
  • Let it cool, and then stir the chocolate chips into the mixture.
  • Make small balls out of the maida dough and then roll them into circles.
  • Fill each with a small amount of the chocolate filling and then shape into gujiyas and seal.
  • Fry the gujiyas in ghee for 15 minutes on low flame.
  • Meanwhile, make the sugar syrup by adding half a litre of water to 2 kg sugar and boiling on a high flame for 10 minutes.
  • Soak the gujiyas in sugar syrup for a few seconds.
  • Garnish with silver warq, chopped nuts and saffron and serve.
