1.  Andhra Mutton Curry 

Hot, fiery and spicy, this delicious mutton curry from Andhra Pradesh is pure bliss. If your heat-o-meter is high then this curry is for you. Tender mutton pieces are cooked in a tomato and onion gravy, which is spruced up with curry leaves and bay leaves. Whole spices are used for a rich flavour. 

2.  Rajasthani Mutton Curry 

Also known as laal maas, this is a popular mutton curry from the region. Made with Kashmiri chillies and a host of other spices, it has a rich and vibrant colour and aroma. The Rajasthani mutton curry is cooked in a curry of ginger, garlic, onions and yoghurt. It makes the gravy thick and balances the heat of the spices. 

3.  Railway Mutton Curry 

This mutton curry comes with a legacy of historical flavours. Prevalent during the time of British Raj, when India was yet to be independent, the Indian Railways served a mildly spiced mutton curry to the passengers travelling on the first class coach of the train. This is what gave the curry its interesting name and has remained with it ever since. 

4.  Kashmiri Mutton Curry
