What Are Eggs Chou Chou?

Eggs chou chou is a Parsi style of making eggs, where the boiled eggs are separated,  whites and yolks. The egg whites are finely chopped and topped with fried potato straws, or salli, and garnished with caramelised onions. The Worcestershire sauce or any sauce of your choice is blended with the mix to give it a distinct flavour.

Ingredients:

    4 boiled eggs

    1 peeled and sliced potato

    ½ cup chopped coriander leaves

    1 diced onion

    Oil  

    Chopped green chillies

    1 tablespoon Worcestershire sauce

    Turmeric  

Method:  

    Begin by boiling eggs and separating the egg whites from the egg yolk.

    Slice potatoes into thin straws and fry them until golden brown.

    Then, put oil in a pan and add onions. Caramelize them properly.

    Add in your sauce with all the ingredients and spices.

    Place the egg white mixture carefully and top it with the yolk.

    Garnish with potato straws and enjoy.
