You will need a few essential components to prepare umm ali, which combine to give it its distinct flavours and textures.

  • Pastry (500g); stale bread or puff pastry, broken into small pieces, is traditionally preferred by many.
  • Milk(1 cup); to create a rich, creamy custard-like texture that perfectly coats the crust, full-fat milk works best. 
  • Nuts(½ cup finely chopped); topping typically consists of almonds, walnuts, and pistachios to create a crunchy contrast.
  • Shredded Coconut, raisin (¼ cup); When serving, all of these will be placed on top and piled within the pudding.
  • Sugar (½ Cup); to make the milk mixture sweeter, regular granulated sugar is required.
  • Vanilla extract which adds flavour and improves the dish's overall flavour.

Preparation Steps

  1. To begin, tear the bread or pastry of your choice into bite-sized pieces. If you're using phyllo pastry, you can slice the layers into smaller pieces after cooking them until they're crispy. For extra crunch, some people like to toast the pieces just a little more. 
  2. Just arrange them on a baking dish and bake on low until they turn golden brown. But watch out that they don't burn.  
  3. Arrange the ripped pieces of pastry in a baking dish. This will absorb all of the delectable custard that is poured later and act as the base layer of your umm ali.

Preparation Of Creamy Milk Mixture

  1. Pour the full-fat milk into a medium-sized saucepan and set it over medium heat. Stir it from time to time to keep it from burning.
  2. Add sugar as per taste, ground cardamom, and a pinch of cinnamon to the warm milk. Stir continuously until all of the sugar has dissolved.
  3. A teaspoon of vanilla extract will give the food a deep, fragrant flavour. Allow the mixture to gently simmer so that the flavours of the spices can steep into the milk.

Cooking Of Umm Ali

Pour the warm milk mixture over the layers of crust in the baking dish. Make sure every component is completely submerged in water, but do not overdo it. Generously sprinkle chopped nuts over the top layer. To ensure that they are uniformly distributed throughout the crust and provide a wonderful crunch, gently mix them in. After preheating the oven, bake the umm ali for 15 to 20 minutes, or until the top begins to bubble and turn golden. The centre should stay creamy, but the outside should be just a little bit crispy.

Serving And Garnishing

After Umm Ali is perfectly baked, take it out of the oven and allow it to cool for a short while. As per your preference, you can have it warm, at room temperature, or even cold. Add a dash of powdered sugar or a drizzle of honey for sweetness as a finishing touch. To counterbalance the heavy flavours, some people like to eat it with a scoop of vanilla ice cream or a dollop of whipped cream. The nutty crunchy exterior coupled with a smooth creamy centre and a flaky crust will make your guests’ taste buds dance with joy.
