Because we believe that healthy eating doesn’t have to taste ‘bad’ we rustled up three super quick and easy recipes for treats that taste almost as good as they look. And the best news is that they all come together with three ingredients or less.

1-Ingredient Banana Ice Cream

All you need is a nice, ripe banana to make this easy and healthy take on ice cream. The high levels of pectin ensure that there isn’t any iciness of flakes in the final dessert, just smooth sweet banana goodness. 

Ingredients:

  • 1 ripe banana per person

Method:

  • Peel and chop the banana into even slices.
  • Freeze the banana for as long as possible, 2 hours is generally the minimum to ensure it's frozen solid.
  • Transfer the banana pieces to a food processor or blender and blitz at high speed.
  • Blend, scraping down the sides occasionally until it turns into a smooth mixture.
  • At this stage you can add toppings like nuts or chocolates and your easy ice cream is ready to serve.

2-Ingredient Peanut Butter Cookies

It sounds impossible, but you can make cookies with no flour, butter, eggs or sugar. All you need is natural peanut butter. This works because natural peanut butter contains only peanuts and salt, processed peanut butter contains oils which will make your cookies melt. The maple syrup is the magic ingredient which will bind it into a dough. So check the ingredients on your peanut butter jar and get cooking.

Ingredients:

  • 1 cup creamy natural unsweetened peanut butter
  • 2 tbsp maple syrup

Method:

  • Preheat the oven to 180°C. Line a large baking sheet with parchment paper
  • In a medium bowl, stir together peanut butter and maple syrup with a spatula until it thickens and resembles cookie dough. 
  • Scoop cookie dough onto a prepared baking sheet, spaced 2 inches apart. Using the palm of your hand, flatten cookie dough into a round disk. 
  • Bake for about 10-12 minutes or until the surface of the cookies look dry and cooked. 
  • Allow them to cool before removing them from the tray and serving.

3-Ingredient Chocolate Brownies

Here’s a great way to get rid of those bananas that have been sitting around forever while also making a delicious, healthy dessert. Because they don’t contain sugar, these brownies aren’t too sweet but maple syrup or honey can be drizzled over while they’re still hot for a sweeter finish.

Ingredients:

  • 4 medium, overripe bananas
  • ½ cup natural almond butter
  • ½ cup unsweetened cocoa powder

Method:

  • Preheat the oven to 180°C. Line an 8x8 inch baking tin with parchment paper
  • Blend the bananas, almond butter and cocoa powder until it forms a smooth paste.
  • Pour the batter into the pan and bake for about 20 minutes.
  • Let the brownies cool completely before cutting up and serving.
