As the advocacy to celebrate 2023 as the year of the millet powers through, many creative recipes seem to stem from the need to consume more of these indigenous pseudo grains. There is much noise on the internet about how refined food isn’t really the best option to consume on a regular basis and while we concur with the thought, there are some things that we can’t imagine eating a ‘healthified’ version of; take the waffle, for example. That said, combining health with taste doesn’t always have to be a bad thing or imply a compromise on either of the two.

While this recipe for ragi waffles does use a bit of all-purpose flour, it also promotes the use of ragi millet flour and the nutritional value is further enhanced by fresh, seasonal fruits. You could also make this recipe completely sugar-free by substituting the sugar with a healthier, organic alternative like honey or maple syrup. Another fun way to switch up the recipe is to omit the sugar or sugary stuff completely and make savoury waffles to eat with eggs and bacon or even fried chicken! The options are endless but delicious.

Recipe:

Ingredients

  • 1 cup ragi flour
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 3 teaspoons baking powder
  • 2 eggs
  • 1.5 cups warm milk
  • 1/3 cup vegetable oil
  • 1/3 cup butter

Method

  • Mix all the dry ingredients together in a mixing bowl and set aside.
  • Whisk the eggs until they’re foamy and add the warm milk, oil and melted butter to combine. Pour the wet mixture into the dry ingredients and fold together using a spatula.
  • Brush the waffle maker with some more oil or butter and pour the batter in slowly. Cook the waffle for 4-5 minutes and rest on a wire rack for 2 minutes to let it turn crispy on the outside.
  • Cut into four pieces and pile on any fruits of your choice (kiwi, banana, strawberries, mango) and serve warm with maple syrup or honey.
