In the viral recipe for banana bread muffins, the blogger uses overripe bananas, which made mashing them easier using a chopping board and fork as compared to using a bowl for the same process. This hack actually results in a quicker and more hassle-free mashing process. The blogger revealed that these banana bread muffins tasted just like banana bread but in muffin form!

Here’s how you can make these banana bread muffins at home:

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3 large, ripe bananas, about 1 1/2 cups mashed
  • 2 large eggs, at room temperature
  • 1/2 cup packed light brown sugar
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup walnuts, chopped

Method:

  • Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius). Line a muffin pan with cupcake liners.
  • Whisk the dry ingredients—flour, baking powder, baking soda, salt, and cinnamon—in a medium-sized bowl and set aside.
  • Now mash the bananas in another bowl. Whisk in the eggs, brown sugar, melted butter, and vanilla.
  • Pour the dry ingredients on top of the wet ingredients and continue to whisk until combined. Fold in the chopped walnuts.
  • Pour the batter into the prepared muffin pan and bake for 18–20 minutes. Check with a toothpick if it’s done—and if it comes out clean, it is done.
  • Then transfer the muffins to a cooling tray, and they are ready to be served.
