In the entire Marwar region including Jaisalmer, Barmer, Bikaner, Jodhpur, Sirohi Jalore this is a very common scene. Haldi or turmeric which is known for its health benefits not many know that it also makes for a great vegetable that is full of taste and health. Turmeric curry is the pinnacle of this culinary experience, with its combination of spices that create a flavor sensation like no other.
Haldi ki subzi is a comforting, flavorful dish that has been part of Indian cuisine for centuries. The key to making this dish is to use fresh turmeric, which can be found easily in any local markets. The curry made from freshly-ground turmeric and other spices, and it can be enjoyed as a side or the main course. Raw turmeric curry is a part of Rajasthani tradition. Which has been made in the royal houses of Rajasthan for centuries. Only ghee is used in making raw turmeric curry. Due to which it can be used for food for a long time.

It was a first for me when I tasted this rich dish at Kaner Retreat - India's First Desert Botanical Resort, a passion project of Sapna Bhatia which is a fully sustainable retreat on the desert scrub land, this oasis showcases local Rajasthani workmanship at its best. It was here that Bhishan Singh ji laid the table with much love and thing that caught my attention was this Haldi ki Subzi.
To make this curry, you will need:
• 4 tablespoon ghee
• 1 teaspoon cumin seeds
• 1 onion, diced
• 2 cloves garlic, minced
• 1 teaspoon grated ginger
• 10 tablespoon raw pounded turmeric
• 1 teaspoon ground coriander
• 1 teaspoon ground cumin
• 1 cup green peas drained and rinsed
• 1 cup green onions chopped
• 2 tablespoons chopped fresh cilantro leaves
Instructions:
• Heat ghee in a pan and add the grated turmeric.
• Cook it over medium heat to kill the bitterness and take it out
• Now tamper it with some garlic, cumin and add the onions and tomatoes.
• Simmer for 10 minutes till it gets cooked well and add the curd
• Once the oil separates, add all the vegetable and cook again for 10 more mins
• Now add the turmeric to the pan and mix them all of them well.
• Add slight water if needed until the vegetables are cooked through.
• Once done add some Green onion if you want.
