With Marathi new year round the corner, every house is getting ready to bring the best delicacies out from the kitchen. Falling on Chaitra Navaratri, Gudi Padwa is celebrated with much enthusiasm throughout Maharashtra and other neighbouring regions. On this day people place the decorative Gudi flags and motifs as a sign of good luck outside their houses and later feast traditional delicacies and dance their way into the year.
The Chef Prakash Joshi Corporate Chef Consultant from Kynd Cafe and bar has curated an interesting dessert variety which is pretty colourful, creative and flavoursome and culturally rich festive feel is also seen on the plate. Here’s the recipe
CHOCOLATE SACHER TORTE - Sweet Dish, Serves:10
Ingredients :
• 200 grams Butter
• 90 grams of icing sugar
• 200 gms dark chocolate
• 200 gms All Purpose flour
• 100 Gms Cocoa Powder
• 90 grams sugar
Filling :
• 200 Gm apricot jam
Garnish:
• Heavy cream
• 10 Edible flowers,
• Cherries
Method :
• Beat together the butter and icing sugar nice and light, gradually add in the flour and melted chocolate, stirring constantly.
• Add the sugar to a stiff peak and mix them into the chocolate batter, Gently folding in the flour.
• Place in a lined cake tin and bake for 60 mins at 170*c ( 340*F )
• Allow to cool, remove from the mould, cut through the centre and add the apricot filling glaze with a dark chocolate glaze.
APRICOT FILLING :
• Open a tin of apricot jam and place it on the Double Boiler, bring to the boil so it will set between the layers
• Arrange on a 10" plate as per the photo
EXOTIC FRUIT TART : - Savoury Dish, Serves: 4
FOR TART
Ingredients
• 180 Gm all-purpose flour
• 120 Gm cup sugar
• 120 Gm butter, cut into 1" pieces
FOR FILLING
• 150 Gm cream cheese
• 75 Gm sour cream
• 120 Gm sugar
• 20 Gm grated orange rind
• 30 Ml tablespoons orange juice
Fruits:
• 250 Gm Apple
• 100 Gm Dragon Fruit
• 100 Gm Grapes
• 50 Gm Pomegranate
• 80 Ml tablespoons sugar
FOR GARNISH
Mint Leaves
Method:
• For Tart: In a large mixing bowl combine flour, sugar and butter. Beat at medium speed, scraping bowl often until mixture is crumbly— 2 to 3 minutes. (If using the food processor, combine the same ingredients in the processor bowl, making sure the butter is cold. Pulse 10-15 times. Remove to a mixer bowl.) Make well in the centre of the flour mixture. Blend with a fork until incorporated thoroughly. The mixture will be very dry. Press dough to 1/4" thickness on bottom and sides of 10" tart pan with removable bottom. Chill for 1 hour. Heat oven to 400 degrees F. Brush crust with Butter and bake for 15 to 20 minutes or until golden brown. Cool.

• For the filling: Beat together softened cream cheese with sour cream. Add sugar, grated rind and juice and beat until smooth. Spread evenly over the prepared crust and refrigerate.
• Pour filling Over Tart. Just before serving, garnish by placing fresh Cut Fruits over top. Refrigerate until serving time.
• Just before serving, remove the sides of the pan. Best when served the same day.
