There is no dearth of desserts in India. Every region has a special dessert for every single occasion. You name a festivity, and you will find a dessert significant to the same. If you are a Punjabi or have been to a Punjabi wedding, you know there is a set of sweets given to the guests as a return gift. This box has mathi, shakar pare, shirni, ladoos and gud pare as the key elements. This piece is dedicated to gud pare, the jaggery loaded cousin of shakar pare. 

This traditional Punjabi sweet is significant to marriages and festive season. Gud Para is made of all-purpose flour (maida) and wheat flour (aata). It is coated with jaggery syrup and flavoured with cardamom and fennel seeds. This crispy delight works as a dessert as well as a snack. Ingredients 

  • 500 gm maida 
  • 1/4 cup ghee 
  • 250 gm jaggery 
  • 1 tsp Fennel seeds (Saunf) 
  • Oil, deep frying

Method 

  • Take a bowl and add maida and melted ghee. Mix well until you get a coarse crumb texture and ghee starts holding the flour. 
  • Add water and make a firm dough. Divide the dough into four parts and roll each portion into a thick round circle. Cur vertical strips and repeat. 
  • Heat a kadhai and add oil. Add these dough strips and fry them on medium heat until crisp and brown. When done, drain the excess oil and keep it aside. 
  • Add grated jaggery to a pan and let it melt on low flame. Keep stirring. Cook until it reaches a consistency where you add a drop of jaggery, and it solidifies. 
  • Add saunf and stir well. Turn off the flame and add the fried strips. Mix so that all the strips get coated with jaggery. When done, take out these gur pare and separate them carefully and serve or store!
