From North to South, almost every region in the country has a practice of pickling ingredients in order to preserve them. This includes pickling almost all kinds of fruits, vegetables, even fruits and vegetable peels and whole spices and herbs. Seafood and animal meat is also pickled in many parts of the country. This piece is dedicated to a special pickle close to my heart. Wanna know about it? 

I am talking about the quite underrated guava or amrood pickle. It is underrated because a large number of people don’t even know that it exists while those many of those who know, are yet to realize its potential. For many of us, guavas bring back some of the fondest childhood memories. Remember eating guava with salt and red chili powder? This tangy guava flavour is taken to the next level with the spicy and flavorful guava pickle.

Guavas are already known for their high content of vitamin A, vitamin C, folic acid, potassium, calcium and iron. Moreover, they are high in fiber and low in calories. So, why don’t give this healthy fruit a delicious makeover? This guava pickle has easily available spices and is very easy to make. It has the vibrant flavours of spices like mustard seeds, asafoetida, fenugreek and curry leaves. You can have this achar with your chapati, paratha or even rice. Before you start wondering about the recipe, here you go!! 

Ingredients 

  • 3 to 4 guavas 
  • 1 ½ tbsp red chili powder 
  • 1 tbsp mustard seeds 
  • ¼ tsp fenugreek powder 
  • ¼ tsp asafoetida powder 
  • Handful of curry leaves 
  • 1 tsp garlic (chopped)  
  • 3 green chilies (sliced into small pieces) 
  • 2 tsp sesame oil 
  • 1 tsp vinegar 
  • Salt to taste 

Method 

  • To begin with, clean the guavas and cut them into small cubes. 
  • Heat a pan and add sesame oil. Add mustard seeds and let them splutter. 
  • Add curry leaves, asafoetida, green chilies, red chili powder, fenugreek powder and chopped garlic. Sauté well. 
  • When done, add the guava cubes along with salt. Sauté for 3 to 4 minutes and let it cook. 
  • Then, add vinegar and mix well. 
  • After a minute, remove it from the flame and keep it aside to cool down.  
  • Serve with chapati or rice and enjoy!
