When the buds are still closed but have turned pinkish, they are ready for harvesting. These buds are collected by hand, carefully without damaging the plant, and are then dried.
Cloves are harvested just before they bloom fully, as they will develop their characteristic flavour and aroma during the drying process. Once picked, the buds are spread out in the sun to dry for about 3-4 days. After drying, they turn dark brown and are ready for use.
