This particular recipe isn’t just a life saver. It’s a Bengali classic, known as Kolar Boda, that people usually enjoy with a cup of tea in the evenings. Prepared with some of the most easily available ingredients—in fact, every Indian kitchen stocks them—this deep-fried snack is a favourite because it’s a hassle-free of turning leftover ripe bananas that you might usually throw out. Talk about being sustainable and resourceful at the same time! Here’s the recipe for you to try.

Ingredients:

2-3 ripe bananas, large

1 cup wheat flour or atta

2 tbsp rice flour

2 tbsp milk

1 tbsp scraped coconut (optional)

1 tbsp jaggery, grated (optional)

Oil, for frying

Method:

1. Peel the bananas and place them in a large bowl.

2. Mash them with a fork or your hands.

3. Add the wheat flour, rice flour, jaggery (if you want the fritters to be sweeter still), coconut (if you have any), and milk.

4. Mix well to form a thick batter. If it’s runny, add a bit more wheat flour to balance it out.

5. Now, heat oil in a wok for frying. 

6. Once the oil is hot, use a spoon to add dollops of the batter into it. Go for three-four dollops to begin with.

7. Fry the fritters properly on both sides. Once they turn golden-brown, remove them from the wok onto a bowl.

8. Serve hot with tea. You can also garnish the fritters with chocolate syrup or honey.
