- 7 cups of vegetable or fish broth
- 4 medium-sized cubed potatoes
- 1 small finely minced onion
- 1 chopped carrot
- 1 lb salmon
- 1 cup heavy cream or coconut milk
- 1/4 teaspoon ground coriander
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup chopped dill
Method:
- Bring fish or vegetable broth to a boil in an oversized Dutch Oven or stock pot.
- Add cubed potatoes and cook for 15 minutes.
