Gujarat and Rajasthan are full of hidden treasures and that includes food. Some of the dishes like dhokla, laal maans, dal-baati-churma and fafda are extremely popular, some of the more authentic dishes go under the radar. One of those underrated and very delicious dishes is gavarfali aur dhokli nu shaak. It is an amazing dish that combines the greens of cluster beans and the soft, tender dhoklis. It is a perfect blend of flavours – a little bitter, sour and even sweet. Every bite of it is an experience in itself. Below is a fool-proof recipe for gavarfali aur dhokli nu shaak, that will help you get a different experience for your lunch or dinner. 

Ingredients

  • 250 gm Cluster beans
  • 1 tbsp Jaggery
  • 1.5 tbsp Lemon Juice
  • 1 tsp Red Chili Powder
  • 1/2 tsp Turmeric
  • Salt to taste
  • Baking Soda
  • 2 cups Water

For making dhokli 

  • 1/2 cup Wheat
  • 2 tbsp besan
  • 1/2 tsp Chili Powder
  • Salt to taste
  • 1/2 tsp Asafoetida
  • 1/2 tsp Carom Seeds
  • 1/4 tsp Sugar
  • 2 tbsp Cooking Oil

For tempering

  • 1 tsp Cumin seeds
  • 1/2 tsp Mustard Seeds
  • 1/2 tsp Carom seeds
  • 1 tbsp Peanuts
  • 10-12 curry leaves
  • 5-6 Green Chilies chopped

Making Dhokli
  • Add all the ingredients for making dhoklis in a large and wide bowl.
  • Make a soft but firm dough.
  • Make small sized balls from it.
  • Flatten the balls between your palms and make an impression in the center by pressing with your thumb.
  • Make all the dhoklis in a similar fashion and keep them aside.

  • Trim the ends of the cluster beans and chop them into medium sized pieces.
  • Heat oil in a pressure cooker.
  • Once the oil is heated, add all the tempering ingredients and let the seeds splutter.
  • Add chopped cluster beans and sauté for few seconds.
  • Now, add the powdered spices, salt and coconut.
  • Then sauté for a couple of more minutes.
  • Add 2 cups of water in the pan and let it come to a boil.
  • Now add baking soda and the dhoklis.
  • Give this a good stir.
  • Pressure cook the dhokli for 2 whistles on medium heat.
  • Open the cooker once it cools down.
  • Add jaggery and lemon juice.
  • Give it a boil and check the consistency of the curry.

Serve the dhokli hot with steaming rice. It is one of those dishes that has to be eaten to understand and appreciate the true flavours of it, as no description would be apt to describe the rustic flavours of gavarfali aur dhokli nu shaak.
