The Christmas bells have already started ringing, and the whole world is ready to witness the most-awaited festival of the year. Observed as the birth anniversary of Jesus Christ, it falls on December 25. On this day, people visit the church for prayer, sing carols, exchange gifts and cards, and indulge in a grand feast with friends and family.

Cakes, puddings, muffins, pies, and tarts are the show-stoppers of this holiday season.  Recently, the Food Safety and Standards Authority of India (FSSAI) shared a delicious recipe for banana muffins with millet muesli on their Instagram handle. Packed with the goodness of bananas and millet muesli, this treat is easy to prepare and can be a perfect addition to your Christmas menu. The recipe was posted with the caption, “Savour the delightful combination of moistness and flavour with these banana muffins featuring millet muesli. A simple and delightful treat to brighten your day.” 

Millets are an extremely nutritious food item, and the United Nations, at the behest of the Government of India, has declared 2023 the International Year of Millets. According to APEDA, they are a good source of minerals like iron, zinc, and calcium, along with being gluten-free. They also support a good environment, as millets have low water and input requirements.

As per FSSAI, these banana muffins have 355 kcal of energy, 7.6 g of protein, 15 g of fat, and 41 g of carbohydrate. Here is the recipe to prepare banana muffins with millet muesli; do try it at home.

Banana Muffins With Millet Muesli

Preparation time: 10 minutes 

Total time: 30 minutes.

Servings: 12 people 

Ingredients

  • 2 ripe bananas, finely chopped and mashed 
  • 200 g sugar  
  • ½ cup atta  
  • ½ cup maida 
  • 1 ½ teaspoons baking powder 
  • 1 ½ teaspoons baking soda  
  • ¾ cup butter or oil 
  • ¾ cup curd  
  • 1 cup of millet muesli  

Method 

  • Beat the bananas and sugar together for about a minute with the help of a mixer. 
  • Sieve flour, baking powder, and baking soda properly.
  • Add the wet ingredients, like curd and butter, gradually alongside the flour mix.
  • Next, add millet muesli gradually and mix.
  • Pour the batter into paper cups and bake at 180 degrees for about 25–30 minutes or till done.  
  • Let it cool completely before serving.
