  • 60 ml grapefruit juice
  • 2 tablespoons simple syrup
  • 2 tablespoons lime juice
  • 60 ml tequila
  • 1 cup club soda

Method

  • Combine the grapefruit juice, lime juice and simple syrup and mix everything until combined. Pour it into a large, deep dish or ice moulds and stick it in the freezer overnight or for a minimum of 6 hours.
  • Once frozen, use a fork to scrape bits of ice from the deep dish or simply add the frozen cubes from the mould to a food processor and blend the contents until they turn into a coarse mixture with shards of ice, still intact.
  • Pour the frozen slush into a glass and add the tequila. Top up with club soda, squeeze some lime juice and serve cold with a spoon to eat it with.
