Pumpkin Halwa 

Pumpkin may sound yuk but this Pumpkin Halwa is delicious. Healthy and tasty pumpkin halwa is one of the best Indian desserts to keep sugar levels in order. Not only does this delicacy imbibes the wholesome of this fruit, but is healthier and has higher nutritional values. 

Ingredients 

  • 1 cup milk 
  • 1 cup grated pumpkin 
  • ¼ tsp cardamom powder 
  • 1 tsp sugar-free 
  • 4 strands of saffron 
  • 1 tsp ghee 
  • Some dry fruits 

Method 

  • Take a pan and add ghee 
  • Heat the pan and when ghee gets hot, add grated pumpkin 
  • Sauté for 4 to 5 minutes 
  • Add milk and cook the pumpkin till the milk is almost absorbed 
  • Add sugar-free, cardamom powder and saffron strands 
  • Mix well while cooking on medium flame  
  • Turn off the flame when the halwa starts leaving the sides of the pan 
  • Put the halwa into a serving bowl and garnish with dry fruits

Ingredients

  • 2 cups raisins 
  • 2 cups wheat flour 
  • 2 eggs 
  • 3 tsp sugar-free 
  • ¾ cup vegetable oil 
  • 1 tsp vanilla extract 
  • 1 tsp baking soda 
  • ½ tsp ground nutmeg 
  • 1 ½ tsp ground cinnamon 
  • 1 cup walnuts (chopped) 

Method 

  • Preheat the oven to 180 C. Grease and flour a 10-inch cake mould. 
  • Take a pan, add raisins and water. Cook until the water is absorbed. Let it cool 
  • Add eggs, vegetable oil, vanilla extract, and sugar-free. Mix well 
  • Sift flour, baking soda, salt, ground cinnamon, and ground nutmeg into the egg mixture 
  • Stir until combined. Mix in raisins and chopped walnuts 
  • Pour batter into the mould. 
  • Bake in the oven

Oats Apple Phirni

Ingredients 

  • ¾ cup powdered cooking rolled oats 
  • ¾ cup grated apple (unpeeled) 
  • 2 tsp sugar-free 
  • 3 cups low-fat milk

Method 

  • Take a non-stick pan, add milk and bring it to a boil 
  • Add oats and mix well 
  • Cook on a medium flame for 1 to 2 minutes while stirring continuously 
  • Remove the pan, add sugar-free and mix well 
  • Keep aside to cool 
  • Add the apple and mix well 
  • Refrigerate for 30 to 45 minutes 
  • Serve chilled

Paneer Kheer

  • Keep aside to cool completely 
  • Add sugar-free and cardamom powder 
  • Mix well 
  • Add Paneer and mix well 
  • Refrigerate for one hour 
  • Serve chilled
