In other words, we have found our license to indulge and today seems to be like a perfect day to make Aloo Jalebis.

The discussion on Indian desserts are incomplete without our most adored jalebi. This crispy sweet is a crowdpuller. From the street corners to the best of the sweet-shops- it is available in every nook and cranny of the country. This ‘desi’ mithai is made with a blend of all-purpose flour, curd, ghee, sugar, saffron strands and various other ingredients which are beaten together in luscious batter. Then with the help of a piping bag it is given its charecteristic flower-like shape, which is then deep fried and doused in the sweet sugar syrup.

Hot and crispy jalebis with hot piping tea can make any mundane day joyful. Therefore, we bring you the recipe of jalebi which is not just extraordinary but can satiate any sweet-tooth. This recipe is called aloo-ki-jalebi which is made from potatoes. That's right,  the vegetable acts as a binding agent that helps to make the jalebi crunchier and even more appetising. So, if you are a hardcore fan of jalebi then you should definitely give it a try.

Ingredients:

• 2 medium sized boiled potatoes, grated

• 3 tbsp all-purpose-flour

• 2 tbsp curd

• 1 tbsp ghee

• 1 cup water

• 1 ½ cup sugar

• 1 tsp cardamom powder

Preparations:

1. Take a thick bottom pan and boil water with cardamom powder and sugar over high flame heat for at least 5-7 mins. Keep it aside.

2. In a bowl add boiled potatoes, all-purpose flour, ghee and curd. Mix the ingredients very well until the batter is smooth. If necessary, you can add water.

3. Transfer the batter into the piping cone.

4. Take a pan and pour oil into it for the purpose of deep frying.

5. When the oil is hot enough, lower the flame and start squeezing the cone to make spiral-shaped jalebis. Fry them until they are golden brown in color.

6. After this, soak the jalebis in the sugar syrup for 4-5 mins.

Your crispy and delicious jalebi is ready to eat.
