Ingredients: 

4 cups of kale leaves, washed, stems removed, and chopped

1 orange, peeled and segmented

1 grapefruit, peeled and segmented

1 small red onion, thinly sliced

1/4 cup sliced almonds

2 tablespoons of dried cranberries

2 tablespoons of extra-virgin olive oil

1 tablespoon freshly squeezed orange juice

1 tablespoon freshly squeezed lemon juice

1 teaspoon honey (optional)

Salt and pepper to taste

Instructions:

In a large mixing bowl, add the chopped kale leaves. Drizzle with olive oil and a pinch of salt. Massage the kale with your hands for a few minutes until it becomes slightly wilted and tender.
