An uttapam is a South Indian style of dosa (also spelt uthapam, uthapam, etc.). An uttapam is a fatter dosa with toppings as opposed to a regular dosa, which is crisp and crepe-like. Because appam is prepared in a pan with a round bottom and utthia-appam is prepared on a flat skillet, the name is derived from the Tamil words appam and utthia or uttria, meaning "poured appam." It is specifically mentioned in old Tamil literature. Idli, dosas, or uttappams are the traditional morning foods of Tamil people, usually served with sambar and chutney.
Rice and urad dal are combined in a 1:3 ratio to make the uttapam batter. The rice can be a mixture of ordinary rice, like basmati, and rice that has been parboiled. After soaking the rice and lentils overnight, they are crushed and fermented till they rise. In a circular pattern, the batter is spread over a hot pan before the toppings are added and gently slapped into place. When it is golden brown, oil is again drizzled around it, and a flip is performed to ensure that the second surface is also baked. The uttapam is subsequently prepared for serving and consumption.
Ingredients
- 3 Boiled potatoes
- 1 tsp Chana dal
- 1 tsp Urad dal
- 5-6 Curry leaves
- 2 Green chillies
- 1 tsp Ginger
- 2 Medium onions
- 1 tsp Rai
- to taste Salt
- 1/2 tsp Haldi
- 1/2 tsp Red chilli powder
- A pinch of hing
- Rice and urad dal batter
- 3 tbsp Oil
Method
- First, heat two teaspoons of oil in a skillet, add the lentils (chana and urad) and stir in the mustard seeds until they begin to pop.
- Add the asafoetida, ginger, and green onion, and simmer for a brief period of time. Add curry leaves and mashed potatoes that have been cooked.
- After stirring thoroughly, add the turmeric, red pepper, and salt to taste. Fry the mixture for a little time. After mixing in the green coriander, extinguish the flame.
- The dosa tawa is now heated on the gas and lightly greased. By using a ladle to fill it, spread the batter. Give it a few seconds to fry.
- It is then covered with a layer of the prepared potato mixture. Enjoy this masala uttapam by flipping it over and roasting it from the other side as well.
