Making stuffed cucumber kakdi ki sabzi is relatively easy. One needs to combine just a handful of kitchen ingredients. Although you might have to spare about just twenty to thirty minutes of your precious time, the result is guaranteed happiness and satisfaction. Cucumbers are bright, green-colored vegetables that are regarded as quite hearty and healthy. Like many vegetables we generally consume daily, cucumbers are too replete with many benefits such as being high in antioxidants, nutrition, vitamins and more. People in Rajasthan use cucumbers in abundance, and this kakdi ki sabzi holds an extraordinary place in the heart and soul of every Rajasthani, whether it be kids or adults. It’s time you add this one too! So here’s the recipe to make kakdi ki sabzi at home.
Ingredients-
- Half kg tar kakadi
- 2 tablespoon fennel seeds
- 1 tablespoon salt
- 1 tablespoon turmeric powder
- 2 tablespoon red chilli
- 2 tablespoon coriander powder
- 2 tablespoon besan
- 4-5 big tablespoon oil
Method-
- First, take the kakdi and cut them finely into tiny pieces. Make sure to cut it in half and scoop out the inner part of kakdi.
- To make the stuffing, take a bowl and add all fennel seeds and all the masalas. Combine the masala in besan, and make sure to add one tablespoon of oil.
- In the slit kakdi, add this stuffing in between and keep aside.
- Heat oil and add all the stuffed cucumbers into a pan. Let it cook for 10 -15 minutes.
- When the oil starts to separate, take the stuffed cucumbers out and pour them into a serving dish.
- Kakdi sabzi is ready! Garnish with fresh coriander.
Serve warm and relish it with roti or phulka.
