
Eid-ul-Adha 2021 is right here and let’s be honest, we look forward to all the indulgences we can get our hands on as soon as the festivity arrives. Sevaiyan or vermicelli is no stranger to the celebration of Eid. While it is most commonly prepared on Meethi Eid post the holy month of Ramadan, Bakrid too is graced by the presence of sevaiyan kheer in its feast. The thin, noodle-like ingredient is used to make many staple festive delicacies like sheer khurma, kimami sevaiyan and much more. Sevaiyan kheer, however, is more common. And to perfect the art of making it at home, one needs to be patient.
It shouldn’t be too mushy nor too dry, slightly al-dente is what makes a perfect bowl. Since it is combined with milk, it tends to get softer, better to not make it mushier. So on Eid while you relish all the kebabs and curries, make sure to end it on a sweet note with this sewaiya kheer recipe. One bite and you’ll know that it has festive indulgence written all over it!
A hearty mix of sevaiyan cooked with milk, cardamom, nuts and sugar, here’s how you can make a perfect bowl of thick kheer to celebrate Eid.
Ingredients
100 gms vermicelli
50 gms pure ghee
600 ml milk
80 gms sugar
10 gms green cardamom
5 gms cloves
30 gms whole almonds
15 gms sultanas / kishmish
Method
1. Roughly crush the vermicelli. Cut the almonds into thick slices. Soak the kishmish in hot water and set aside.
2. Heat the ghee and fry the almonds. Drain and keep aside.
3. Lightly fry the cloves and the cardamom along with the vermicelli till it is slightly brown.
4. Now add the milk and bring to a boil. Simmer on a slow flame till the milk thickens.
5. Add sugar and kishmish at this point and remove from the fire. Allow to cool completely.
6. You can transfer it to a serving bowl and garnish with the fried almonds and rose petals if you wish.
