In the Indian Subcontinent, this dish known as egg bhurji comes from this scrambled eggs recipe which is a plain version of Roman scrambled eggs. This food is a common diet for the people living in the parts of Northern and Western India. The recipe may vary from region to region but the scrambled eggs. Indian spices, onions and tomatoes remain constant almost everywhere. This dish is sometimes also compared with the Parsi dish ‘Akuri’, but is different from it. Akuri is another kind of scrambled egg recipe made with mild spices, potatoes and ginger. The texture of Akuri makes it different from Bhurji. The eggs in Akuri are not overcooked and have a poury consistency.
Ingredients:
• 4 Eggs
• 4 Tbsp Oil
• 3 Medium-size Chopped Onions
• 2 Chopped Tomatoes
• 1/2 Tbsp Cumin Seeds
• 1 Chopped Green Chilly
• 1 tsp Coriander Powder
• 1 tsp Red Chilli Powder
• 1/2 tsp Black Pepper Powder
• 1/2 tsp Roasted Cumin Powder
• 1/2 tsp Turmeric Powder
• 1/2 tsp Garam Masala Powder
• Salt as per taste
• A Fistful of Coriander Leaves
Method Of Preparation:
• Heat oil in a pan
• Add cumin seeds and let it get tempered
• Add onions, cook it for a minute and add green chilli, cook for another 1 minute
• Now add tomatoes to the pan and let it get mushy and soft
• After it, add all the spices and let them set along with the onion and tomatoes by cooking for a minute
• Now add the eggs and keep stirring it till the eggs ooze out all the moisture and get dried
• After continuous stirring for 3-4 minutes, the easy and delicious bhurji is ready to be served with pav or chapatis.
Though being called a breakfast dish, this one recipe fits on the dining table at any time of the meal. If one gets bored of regular vegetable curry, this dish definitely acts as a substitute and pairs well with any pav, chapati, paratha or fulka.
