•1/4 teaspoon black pepper

•8 slices of whole wheat or whole grain bread

•2 tablespoons of vegan mayonnaise

•1 cup of baby spinach leaves

•1/2 cup thinly sliced cucumber

•1/2 cup shredded carrots

•1/4 cup sliced red onion
