Cheesy Potato Chips

Any variety of chips would do, but the plain salted one will suit the requirement better than the flavored ones. Don’t over-bake the chips as they might dry the cheese and burn the taste.

  • ¼ cup fresh coriander (chopped)
  • 2 tsp green chilli

  • Salt, as per taste
  • Bread crumbs for coating
  • Oil for deep-frying

For batter:

  • 1 cup all-purpose flour
  • ¾ cup water

Method:

  1. To make these crispy corn cheese balls, take a non-stick pan, heat the butter in it, add maida, stir it and cook for 1- 2 minutes.
  2. Now add milk and simmer till the mixture starts thickens up and leaves the sides of the pan. In this process, stir continuously.
  3. Turn off the flame and transfer this paste onto a plate.
  4. Add corn, coriander leaves, green chilli, salt and cheese to that plate to give a good mix, and allow this mixture to cool completely.
  5. Once it is adequately cooled, mix the mixture with your hands, and roll it into small round-shaped balls. While rolling up, apply oil to your palm to avoid the stickiness of the batter.
  6. Take another small bowl/plate, add maida and water and convert into a thick slurry.
  7. Now, take one ball at a time, dip into the water-maida mixture and roll them into the bed of breadcrumbs till they evenly cover the balls.
  8. Immediately, slip them in hot oil, deep fry the corn-cheese balls for a few minutes till they turn golden brown.

Your corn cheese balls are ready to be served warm.
