In most cases, vegan ice cream is more beneficial than regular ice cream because they contain healthy nuts and natural fruits.

Vegan Pistachio Ice Cream 

Creamy-green vegan ice cream has a beautiful texture with the flavors of pistachio.

Ingredients: 

  • 400 ml coconut cream (unsweetened)
  • 400 ml coconut milk (full fat)
  • ½ cup white sugar (refined)
  • ¼ cup maple syrup 
  • 1 cup roasted pistachio 

Instructions:

  1. Before starting this delicious ice cream, first, you need to crumble the pistachios, you can use a food processor for that, or by the roller pin, you can do it. 
  2. Take a pan, add coconut cream, coconut milk, sugar, maple syrup and bring them to simmer. In this process, constantly stirring. As soon as it reaches a thick mixture, remove this from the heat and add crumbled pistachios, mix them well. 
  3. Blend till you get a smooth texture like melted ice cream. Once it is done, pour into a lidded air-tight container. 

And transfer the container to the refrigerator overnight to chill. Scoop it in your bowl and enjoy.

Vanilla Vegan Ice Cream 

This vanilla ice cream is delicious and best for parties. It's simple, prepared in less time, and made up of nuts to have a unique crunch in this recipe.

Ingredients:

  • 2 frozen banana
  • ¾ tsp cacao powder 
  • 2 tbsp almonds 
  • 1 tbsp almonds (skin off, soaked overnight)
  • 3 tbsp cashew nuts
  • 2 tbsp cashew nuts (soaked overnight)
  • 2 tbsp peanut butter 
  • 3-4 drops vanilla essence 
  • White sugar, if need it 

 Instructions:

  1. First, blend the soaked almonds and cashews in a blender, make a smooth paste, and keep this aside. 
  2. In the same blender, add frozen bananas, peanut butter, cocoa powder, vanilla essence and blend till it smooth in texture. Mix well. 
  3. Take an air-light-lidded container, pour the mixture into it and sprinkle chopped almonds and cashew nuts on the top for crunch flavor. Give a gentle mix. 
  4. And last, transfer the container to a refrigerator overnight. 

Once it is done, dip in and enjoy crunchy vanilla vegan ice cream.
