Vegan Pistachio Ice Cream
Creamy-green vegan ice cream has a beautiful texture with the flavors of pistachio.
Ingredients:
- 400 ml coconut cream (unsweetened)
- 400 ml coconut milk (full fat)
- ½ cup white sugar (refined)
- ¼ cup maple syrup
- 1 cup roasted pistachio
Instructions:
- Before starting this delicious ice cream, first, you need to crumble the pistachios, you can use a food processor for that, or by the roller pin, you can do it.
- Take a pan, add coconut cream, coconut milk, sugar, maple syrup and bring them to simmer. In this process, constantly stirring. As soon as it reaches a thick mixture, remove this from the heat and add crumbled pistachios, mix them well.
- Blend till you get a smooth texture like melted ice cream. Once it is done, pour into a lidded air-tight container.

Ingredients:
- 2 frozen banana
- ¾ tsp cacao powder
- 2 tbsp almonds
- 1 tbsp almonds (skin off, soaked overnight)
- 3 tbsp cashew nuts
- 2 tbsp cashew nuts (soaked overnight)
- 2 tbsp peanut butter
- 3-4 drops vanilla essence
- White sugar, if need it
Instructions:
- First, blend the soaked almonds and cashews in a blender, make a smooth paste, and keep this aside.
- In the same blender, add frozen bananas, peanut butter, cocoa powder, vanilla essence and blend till it smooth in texture. Mix well.
- Take an air-light-lidded container, pour the mixture into it and sprinkle chopped almonds and cashew nuts on the top for crunch flavor. Give a gentle mix.
- And last, transfer the container to a refrigerator overnight.
