November is celebrated as National Diabetes Month to spread awareness about the disease. It emphasizes on educating people about the symptoms, prevention and treatment of diabetes along with maintaining a healthy lifestyle. According to a report by National Center for Biotechnology Information (NCBI), more than 77 million people are diabetic in India. This condition usually restricts the eating habits of the patient as the blood sugar increases with the intake of food high in carbohydrates.  

Due to this, many food items are eliminated from their diet such as sweets, sugary drinks, starchy vegetables and white rice. The condition also limits the consumption of fat, salt and alcohol. But people with such conditions don't have to restrict themselves to bland or boring food. There are variety of diabetes-friendly foods and recipes that actually taste delicious and one can enjoy them without worrying about their blood sugar level.

Here are two diabetic-friendly recipes brought to you by Monika Manchanda, Chief Culinary Officer, LiveAltLife. 

1. Masala Crackers 

Ingredients: 

  • Salt to taste  
  • ½ tsp nutritional yeast 
  • A pinch of asafoetida (hing) 
  • ¼ tsp dry mango powder (amchoor) 
  • ¼ tsp chaat masala powder 
  • ¼ tsp turmeric powder (haldi) 
  • ½ tsp red chili powder 
  • ¼ tsp dried fenugreek leaves (kasuri methi) 
  • 1 tsp olive oil  
  • 1.5 tbsp almond milk  
  • ¼ cup almond flour-inhouse  
  • Cumin seeds as required

Method:  

  • Preheat oven to 200C.  
  • Combine almond flour with water, almond milk and olive oil and all the spices.  
  • Add water only if necessary. Make sure the dough is hard and not too soft.  
  • Knead the dough and let it stand for 15 mins.  
  • Roll out a thin dough between two sheets of parchment paper and cut squares.  
  • Top it with some cumin/ajwain seeds and press firmly into the dough.  
  • Line a baking tray with parchment paper and place the squares on it.  
  • Bake for 15 mins.  

 2. Hot Chocolate  


Ingredients:  

  • Salt to taste  
  • 1 tbsp cacao powder 
  • 2-3 tbsp erythritol 
  • ½ cup coconut milk 
  • ½ cup almond milk 
  • 1 tsp vanilla extract 
  • 1 cup water  

Method:  

  • In a small saucepan, add cocoa powder, sweetener, milk, water and vanilla extract.  
  • Heat on medium flame until it begins to simmer. Remove from heat.  
  • Adjust the sweetness and consistency as per your personal preference. A pinch of salt makes a huge difference.
