Burfi is a famous treat that’s relished as a sweet snack item and served widely during Indian festivals. It is a simple soft fudge which can be prepared with a large number of ingredients to create mouth-watering flavours.
One of the simple and easy-to-prepare burfis is Coconut Burfi which is popular as Nariyal Burfi (in Hindi), Khobra Burfi (in Marathi), and Thengai Burfi in South India. It is prepared with minimum ingredients and has a very decent taste. The main ingredient of the dish is coconut and it is preferred to use fresh coconut to prepare the burfi. The coconut burfi melts in the mouth frequently and has a soft fudge-like consistency.

Ingredients:
- 1 cup Fresh Coconut
- 1 cup of Milk
- 1/2 cup of Sugar
- 1/2 tsp Cardamom Powder
Ghee
Method:
- Put fresh coconut and ¼ cup of water in a grinder and blend them to form a fine puree
- Next, pour this puree over a decent strainer so that thick coconut milk can be extracted. If needed, squeeze it as well to extract the milk properly and completely
- Now, measure one cup of coconut milk and put it in the pan directly
- Once done, put normal milk as well in the same pan and leave it to boil. Add sugar to it when the milk is getting boiled
- After a while, the milk thickens and reduces as well. Now, put cardamom powder also. Keep stirring the mixture once in a while
- Cook it for approximately 30 to 40 minutes over constant heat. Turn off the flame once the milk condenses and turns to a bit darker colour
- Keep stirring it constantly, once it showcases porous texture, shift it to the ghee greased tray and cut the small-sized pieces. Now, let the burfi cool down for a while at room temperature and cut them into pieces once done

- Important Points to Remember:
- The amount of sugar needed is dependent on your taste but it is recommended to use ½ cup of sugar only to have the best taste
- If you want to eat this sweet dish as a soft peda then you can turn off the flame a bit early. Switch it off when the milk gets the consistency just like a porridge
- Keep a close eye while cooking it. Once you notice a change in the mixture and it turns towards a porous texture, transfer the burfi to a tray or else it will turn hard
