Winters act as an alarm for Delhiites. With the arrival of winters, Delhiites know that it’s time for them to indulge in all things warm and delicious. From having chhole kulche for breakfast to rajma chawal for lunch and ending the day with a bowl of daulat ki chaat or gajar ka halwa, the winter indulgence in Delhi is worth the hype. The gobsmackingly delicious culinary delights wait to be relished during winters. 

Being a student of Delhi University, winter was the season to look forward to. From the exciting fest season in the even semester, the winter market and the delicacies- Dilli Ki Sardiyan are indeed worth the wait. One of my favourite memories in Delhi was savouring a plate of tantalizing aloo tikki chaat in an outlet outside my college campus after the tiring rehearsals for the fest. The crispy aloo tikkis topped with tantalizing chutneys, a spoonful of curd along with sliced onions, beetroots and radishes along with a generous sprinkle of sev were enough to make me drool and satiate my palate. So, when I came home during the mid-sem breaks in March, I couldn’t resist trying the delicious chaat at home. However, until a few trails, I could not nail the same flavours and texture of the chaat. So, if you plan to make Delhi street-style aloo tikki chaat at home, here are some tips to save yourself some failed trials and time.

  1. Boil the potatoes properly and mash them without leaving any lumps. 
  2. Cool the mashed potatoes entirely before adding the spices. 
  3. Add a teaspoon or two of chaat masala or amchoor powder to the potato mixture for a tangy flavour note. 
  4. Keep the flame on medium while frying the tikkis. The high flame will result in undercooked and burnt tikkis, and the low flame will let the tikkis soak more oil than required. 
  5. Make sure your tikkis are hot while assembling. Pour some curd followed by a spoonful of green chutney, tamarind chutney, a sprinkle of chopped onions, coriander and garnish it with some sev to finish.
