Legend has it that Keshavji Gabha Chudasama improvised the recipe to cater to the taste preferences of the mill workers and traders in Mandvi. He combined leftover roti (Indian bread) with a spiced potato filling, chutneys, and various toppings to create a unique and delicious snack. The dish gained popularity rapidly and soon became a staple street food item in Gujarat.

Dabeli, involves a simple yet delightful process. It begins with preparing a spiced potato filling, where boiled potatoes are mashed and sautéed with a flavorful blend of spices, such as red chilli powder, turmeric, and roasted cumin. The filling is then stuffed inside a soft pav (bun) that has been lightly buttered and toasted. To enhance the taste, a tangy and spicy tamarind chutney and a garlic chutney are generously spread on the inside of the pav. The stuffed pav is then topped with a garnish of crunchy sev (chickpea noodles), roasted peanuts, pomegranate seeds, and fresh coriander leaves. The final touch is a sprinkling of aromatic chaat masala for an extra burst of flavour. The result is a delectable combination of textures and tastes, with the softness of the pav, the spiciness of the filling, the tanginess of the chutneys, and the crunchiness of the toppings all coming together to create a truly irresistible and satisfying street food experience.
