Ingredients:

  • 1 head of cauliflower, chopped into small florets
  • 1 cup chickpea flour
  • ½ cup water
  • ½ tsp turmeric
  • ½ tsp cumin
  • ½ tsp coriander powder
  • ½ tsp chilli powder
  • ½ tsp garam masala
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Cooking spray

Method:

  • Preheat your oven to 200°C. Line a baking sheet with parchment paper and set aside.
  • In a large bowl, whisk together the chickpea flour, water, spice powders, garlic powder, salt, and black pepper until smooth.
  • Add the cauliflower florets to the bowl and toss to coat them in the chickpea flour mixture.
  • Place the cauliflower florets onto the prepared baking sheet, making sure they're evenly spaced apart. Spray the tops of the florets with cooking spray.
  • Bake the cauliflower nuggets for 25-30 minutes, or until they're golden brown and crispy on the outside.
  • Serve the nuggets warm with your favourite dipping sauce, such as vegan ranch or tahini.
