Ingredients: 

2 cups all-purpose flour 

1 packet active dry yeast 

1/2 cup warm milk (plant-based milk for vegan) 

2 tablespoons sugar 

1/4 teaspoon salt 

1/2 cup vegan butter, chilled 

1/4 cup water 

1 tablespoon flaxseed meal mixed with 3 tablespoons water (as an egg substitute) 

Method: 

In a bowl, combine warm milk, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy. In a separate bowl, mix flaxseed meal and water to create a flax "egg." Let it sit for a few minutes to thicken.In a large mixing bowl, combine flour and salt. Add the vegan butter in small pieces and use your fingers to rub it into the flour until the mixture resembles breadcrumbs. Add the flax "egg" and yeast mixture to the flour mixture. Mix until the dough comes together. Turn the dough onto a lightly floured surface and knead for a few minutes until smooth. Roll out the dough into a rectangle and fold it into thirds like a letter. Repeat this process two more times, chilling the dough in between folds. Roll out the dough one final time into a large rectangle. Cut triangles from the dough. Starting from the wider end, roll each triangle towards the tip to form the croissant shape. Place the croissants on a baking sheet lined with parchment paper. Let them rise for about 1-2 hours.Preheat the oven to 375°F (190°C). Bake the croissants for 15-20 minutes until they are golden brown.
