1. Better The Batter

It is always better to mix dry ingredients separately and the wet ones in a different bowl, before pouring the wet ones into the dry mix, while making the batter. Post making the batter, let it rest for some time before pouring it in the pan. Let it stay for about half an hour. This lets the starch cells to swell up with the moisture which will burst when they come in contact with the heat, lending a fluffy lightness.

2. Perfect The Pan 

Another tip that may work like magic is to let the pan heat up sufficiently and then pour the batter. The pan shouldn’t be smoking hot for the batter, but just hot enough. Too hot can make your pancakes turn brown quickly but it would be under cooked. Sufficient heat will ensure the pancake is cooked to perfection from all sides and is fluffy too. Also always use a flat pan or griddle for even cooking.

3. When To Flip?

For a good pancake, do not keep flipping often. You just need to flip the pancake once when it's dry around the edges and bubbles have formed over the top. Besides you can keep peeking to see if the bottom is golden brown before you flip it.
