Add ginger and cook for one minute, stirring regularly. Toss in the red chili powder, turmeric, and garam masala for 2 minutes or more. Gently add in the apples. Add water and bring it to a boil. Reduce to a low heat, add the dried cranberries or whatever berries you're using, and cook for 15-20 minutes, or until the apples are mushy and the liquid has decreased. Season to taste with salt and pepper. Your apple chutney is now ready to serve. In a pan, heat the oil and add the cumin seeds, apples, onions, and tomatoes, mixing well. Mix in the red chili powder, garam masala, turmeric powder, and lemon juice. To cook the apples, add a little water. Mix in the salt thoroughly. Cover and cook over medium heat for a few minutes, or until most of the water has evaporated and the apples are soft. Finally, thoroughly combine the ingredients, season with cilantro, and serve with hot chapattis or steamed rice. Apple Halwa Ingredients: 1 cup grated apple 2 teaspoon milk powder 1 tsp ghee 1 tsp powdered green cardamom 1 handful cashews 1 cup milk 1/2 cup sugar 1 handful saffron strands 1 handful almonds 1 handful of pistachios Method Place a kadhai over a low-medium heat and add ghee. When it begins to melt, pour in the milk and grated apple, along with the saffron, and bring to a boil. Due to the sourness of the apple, the milk will begin to curdle. Stir the mixture continuously. When the apple and milk combination has dried up, add the sugar and stir constantly to avoid lumps. When the halwa begins to leave the sides of the kadhai, stir in the milk powder and cardamom powder. Continuously stir it. Remove the halwa from the Kadhai after the whole milk has dried up and place it in a bowl. Garnish with pistachios and almonds before serving. Tip To Buy Apples Always check for defects, yellowing, or any form of insect or ringworm while purchasing apples. Check the firmness of the fruit in your hand. Staleness is indicated by any section that feels significantly softer or sinks in. Apples should be stored at a colder temperature, such as in the refrigerator. Make sure you're not storing them with onions or potatoes, as these veggies will cause the apples to overripen and go bad quickly.
