Ingredients
- 4 medium-sized potatoes, peeled and cubed
- 1 cup chopped cauliflower
- 1 cup of chopped carrots
- 1 cup chopped capsicum
- 1 cup chopped onions
- 2 teaspoons of ginger-garlic paste
- 2 tablespoons pav bhaji masala
- 1 tablespoon red chilli powder
- 1 teaspoon of turmeric powder
- 1 teaspoon cumin seeds
- 2 tablespoons of butter
- Salt to taste
- Water as required
- 8 pav buns
- Butter for toasting the pav
Method
- In a microwave-safe bowl, add the cubed potatoes, chopped cauliflower, carrots, capsicum, and onions.
- Add water to the bowl so that the vegetables are almost submerged. Cover the bowl with a microwave-safe lid or plate.
- Microwave the vegetables on high for 10–12 minutes, until they are soft and tender.
- Remove the bowl from the microwave and let it cool for a few minutes. Then, mash the vegetables with a potato masher or a fork until they have a smooth consistency.
- In a microwave-safe pan, add the butter and cumin seeds. Microwave on high for 1 minute until the butter melts.
- Add the ginger-garlic paste and microwave for another minute until the raw smell disappears.
- Add the pav bhaji masala, red chilli powder, turmeric powder, and salt to the pan. Mix well.
- Add the mashed vegetables to the pan and mix everything together.
- Microwave the mixture on high for 2–3 minutes until everything is heated through.
- Toast the pav buns with butter on a separate microwave-safe plate for 1-2 minutes until they are lightly golden.
- Serve the hot pav bhaji with the toasted pav buns and garnish with chopped onions, coriander leaves, and a lemon wedge.
