Chole without Onion, Garlic and Tomato is a great option, especially among North Indians, which can be relished with rice, chapatti or even puri. A taste without onion, garlic and tomato is different, may seem difficult but not impossible to achieve. Hence, a lot of recipes have been developed to complement chole and make it delectable. The Indian masalas and other complementary ingredients make it an irresistible curry. Full of flavour and a good source of protein, this dish is one of the most liked North Indian curries.

A main course dish from Indian subcontinent, the curry maybe dry or could have gravy with a bit of sour note. A lot of variations are available where chole is eaten as a snack too. Typically, Chole masala or chana masala has onion, chopped tomatoes, ghee, cumin, turmeric, coriander powder, ginger-garlic, chillies, amchoor or lemon, and garam masala. Dishes without onion and garlic are helpful for serving a large section of people such as the Jain caste and people on fasting during festivals. Chole Masala is a very basic yet wholesome dish, to enjoy with family.

Process of Making Delicious Chole without Onion, Garlic, Tomato

Ingredients:

  • 1 cup Chickpeas or Chole
  • 1 bay leaf
  • ½ cup Dessicated coconut
  • 1 tablespoon Almond flour 
  • 2 teaspoon Amchoor powder 
  • 1 teaspoon Dried Amla powder 
  • ½ teaspoon Ginger powder 
  • Kasoori methi as a garnish
  • 1½ teaspoon Garam masala or Chole masala without onion garlic
  • Pinch of hing
  • One to two teaspoon ghee

Method:

Preparation of Powders:

  • Take about six to eight almonds and grind to form a fine powder
  • Take a small dessicated coconut; cut into small strips and grind it into powder
  • Soaking method: 
  • Clean & Soak one cup chole a night before in three times water
  • Keep the soaked chole in a pressure cooker with two times water. Bring it to boil for good three whistles
  • If unsoaked:
  • Rinse chole a couple times with water
  • Take chole in a pressure cooker with 3 times water
  • Cover with the lid, and let it cook for at least 35 to 40 minutes
  • After using either of pressure cooking method from above, open the lid and check if the chole are soft, else cook for some more time
  • When chole turns soft, add amla powder and give it a good mix
  • Press some chole with the help of spoon in the mix to make gravy thicker in the end

Gravy Masala preparation

  • In a pan, heat about 2 teaspoon ghee
  • To this, add a pinch hing and mix
  • Now, add dry coconut powder and almond powder and let them heat for less than a minute
  • Add masalas one by one: one teaspoon Amchoor powder, half teaspoon Ginger powder, two teaspoon red chilli powder, one-fourth teaspoon turmeric powder and two and half garam masala or chole masala
  • Cook the masala for two to three minutes
  • Add some more water so that the masala cooks properly
  • Now, add chole to the cooked masala
  • Mix thoroughly and let it cook for about five minutes; stir in between
  • Adjust seasonings
  • Add in kasoori methi and mix

Chole is ready to serve
