Rolls can be stuffed with varieties of stuffings and always taste heavenly. This street style dish comes in varieties and the most loved ones are ‘Egg and Chicken Rolls’ for the non-vegetarians and Paneer Rolls for the vegetarians. Chicken Rolls are the juicy ones as the meat inside is tender and serves as a good appetiser. This can be easily made at home and is loved by Gen-Z and millennials. The different types of sauces added inside the stuffing leave people lick their fingers.

The concept of rolls and wraps are believed to have arrived from Armenia and then reached different parts of the world, including India. It is also believed to be inspired from the famous Kathi Roll, first made in 1932 in the Nizam Restaurant in Kolkata. Kathi Rolls are very famous there and have been one of the most sold snacks during the Durga Puja.

Here’s the recipe for Chicken Paratha Roll.

Ingredients:

  • 1 tsp red chilli powder
  • ½ tsp cumin powder
  • ¼ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp chaat masala
  • ¼ tsp garam masala powder
  • Salt, as per taste
  • A pinch of red food colour
  • ½ tsp tandoori masala
  • 2 tsps ginger-garlic paste
  • 1 tsp corn flour
  • 2 tbsps curd
  • 250 gms boneless chicken
  • 2 tbsps oil
  • Lachha paratha

For the green chutney:

  • 5 garlic cloves
  • 1-inch ginger
  • 2 fistfuls of mint leaves
  • 1 fistful of coriander leaves
  • 1 tbsp lemon juice
  • 3 tbsps curd
  • 1 tsp cumin seeds
  • ½ tsp chaat masala
  • ¼ tsp salt

Method:

  • Take all the spices in a mixing bowl along with salt, food colour, and the tandoori masala.
  • Add ginger-garlic paste, corn flour, and curd to the mix.
  • Now, add the boneless chicken cut into pieces and mix it well and leave for 30 minutes to marinate.
  • Heat oil in a pan and add the marinated chicken, cook for about 5-7 minutes by covering the pan.

For the chutney:

  • Grind all the ingredients of the chutney in a grinding jar and prepare a smooth, thick consistency.

For as assembling:

  • Take a homemade lachha paratha, place the prepared chicken in the centre.
  • Now, add the green chutney and sliced onions and some chopped coriander leaves.
  • Fold the roll from the sides.
  • The roll is ready for a bite.
