Ingredients:

  • 2 cups fresh cherries, pitted and halved
  • 1 cup heavy cream
  • 1 cup whole milk
  • ¾  cup granulated sugar
  • 1 teaspoon vanilla extract

Method:

  • In a medium saucepan, combine the cherries, sugar, and a splash of water. Cook over medium heat until the cherries soften and release their juices, about 8-10 minutes. Remove from heat and let it cool to room temperature.
  • Once the cherry mixture has cooled, transfer it to a blender or food processor and blend until smooth.
  • In a separate mixing bowl, whisk together the heavy cream, whole milk, and vanilla extract until well combined.
  • Add the cherry puree to the cream mixture and stir until fully incorporated.
  • Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
  • Transfer the churned ice cream to a lidded container and freeze for at least 4 hours or until firm.
  • Serve the cherry ice cream in bowls or cones, and enjoy!

Note: If you don't have an ice cream maker, you can pour the mixture into a lidded container and place it in the freezer. Every 30 minutes, take it out and vigorously stir or whisk the mixture to break up any ice crystals until it reaches the desired consistency. Repeat this process for about 2-3 hours.
